Amaranth is not only a flower, but is also considered to be an herb along with a weed. Amaranth flowers are very easy to grow, and are responsive to nitrogen and phosphorus.
Amaranth grows best in a warm climate with full sun and well-drained soil. The best soil for amaranth is a well-drained loam, but amaranth will do well in any type of soil except poorly aerated clay soils.
When planting amaranth, you can sow the amaranth seeds directly into the ground, or start the indoors 6-8 weeks before transplanting to your garden after the last frost has past. Plant the amaranth seeds 7-10 inches apart, or plant the seedlings 10-12 inches apart. Amaranth can be a little over-crowded, and look good in clumps and groups.
After planting the seeds, cover them lightly with soil. Although amaranth is heat and drought resistant, be sure to water your amaranth at least twice a week during the hot summer months. Add a general purpose fertilizer 1-2 times during the growing season. Also, be sure to add mulch to prevent weeds.
The amaranth will grow to a height of 1-2 feet (if growing in rich soil, it can grow up to 6-8ft!), and will produce floral blooms on strong, straight stems that will bloom from mid-summer until the first frost of the year.
