Blanching and then freezing summer squash will be helpful if your plants produce more squash than you can eat this summer. Fresh squash sautéed or steamed is delicious, but if your squash plants overproduce every summer like ours, you will have a lot to freeze. Note: Do not put raw squash in the freezer or it will not taste good.
After picking your squash off of the vine, wipe each one down with a sturdy cloth to get off any tiny, stiff hairs that can be prickly. Some varieties of summer squash produce these. Once the fruits have been wiped off, wash them in your kitchen sink. Then place on a cutting board and cut off the bottom and top. Slice into coins or cut into chunks.
Now we will blanch the summer squash. You will need a large pan, a large bowl, a large metal mesh strainer with a handle, a pasta colander, quart-sized Ziploc freezer bags, a clock with a second hand or a timer, ice, and water.
Fill a giant pot with water and bring the water to a boil. Pull out your biggest colander and place it in the sink. Also, place a giant bowl in your sink filled with ice water.
Pull out your mesh metal strainer, the biggest one you have that will fit in your pot of boiling water and fill it with squash pieces. Plunge your filled strainer into the boiling water for three minutes. Remove the strainer basket filled with squash and immediately plunge it into the ice water to cool the vegetables off. Then dump them in the colander to drain and fill your strainer with more squash pieces. Repeat until all squash pieces are blanched and drained.
Let all of your squash pieces cool. Then fill Ziploc freezer bags with squash and seal. Lay the bags flat on top of each other. Place in your freezer. Freezing squash after blanching will allow the vegetables to last for 12 months. They taste delicious plain or in your favorite recipes.
