Celeriac (also known as turnip-rooted celery or celery root) is known for its knobby root, and is easy to grow compared to celery. Celeriac should be planted in the fall and winter. Like most root vegetables, celeriac in great to grow in your garden because after celeriac is harvested, it will last 4-6 months in a root cellar or refrigerator crisper.
Since you’ll most likely be growing celeriac from seed, you’ll need a long growing season (approximately 120 days). Celeriac takes 2-3 weeks to germinate. Before you plant the seeds, it’s best to soak them in water overnight. After your seeds have dried from the soak, fill a 4-inch pot with sterile potting mix. Then press the seeds lights into the pot and water from the bottom. When the seedlings are approximately ½ inch tall, transplant them either into a large pot or into a garden bed 8 inches apart in rows 18 inches apart from each other.
Celeriac needs continuous moisture in order to thrive. To maintain the moisture for your celeriac, add compost or rotted manure to the soil before planting. Once your celeriac plants are 3-4 inches tall, add mulch to continue to conserve the soil’s moisture. This will definitely help the plants to maintain moisture during the warm days of summer.
To harvest celeriac, shake off as much dirt as possible, and roughly whack off the rootlets with a field knife to remove all but 1 inch of foliage. After cleaning the root with water, place the celeriac in a perforated plastic bag, and store it in temperatures between 35 degrees and 40 degrees F.
