Mache is of the leafy green family. It prefers to grow in the cold season, and contains a mild flavor with a slightly nutty taste. Mache can be grown in early spring and fall, and can even be grown through the winter season. Mache can withstand temperatures as low as -20 F.
When choosing a site to grow Mache, pick a location where the soil is cool, and rich with compost and organic material. Mache has more successful germination rates when the temperature of the soil is between 50 degrees F and 70 degrees F. However, Mache will grow in a variety of soil types.
Sow seeds from ¼ to ½ inches deep and space Mache seeds 1 inch apart in rows 4 inches apart. As the Mache starts to grow, thin the Mache to 3-6 inches between growing plants. Water your Mache moderately, and if needed, fertilize with an all-purpose blend.
As the plants mature, the leaves will look elongated of slight cup-shaped, and will maintain a medium-dark green color. Mache will germinate 7-14 days after sowing, and will mature completely in 40-70 days after planting.
Mache can be harvested in a similar way to lettuce: either by cutting the larger outer leaves during the growing season, or by cutting the whole plant very close to the soil.
Enjoy Mache as a vegetable in salads, or use as an herb to garnish dishes!
