Salad greens are tricky to grow because they require different temperatures for their different stages. Lettuce seeds germinate best at 70 F, but once the plants are above ground, they grow best at 60 F. It’s highly unlikely to get temperatures to remain exact for 60 days in a row in order to have successful lettuce. Because of this, it’s best to have 8-10 different types of salad green seeds in order to find a type that will grow in your weather conditions.
It’s best to start seeds indoors under lights, or in a greenhouse. Once the seedlings sprouts their first leaves, they are ready to be transplanted into individual growing cells for another 2 weeks before transplanting them to the garden.
Leafy greens are more successful when they are grown in rich, loamy soil that contains plenty of organic matter. Transplant your seedlings to your garden beds in 12-16 inch blocks. Water immediately after transplanting, and be sure to water continuously throughout the growing season. This will help keep the leaves succulent and tender.
To harvest, it’s better to use a knife or scissors to make a clean cut to encourage leaf growth. You can also cut entire heads-it just depends on how much of the salad greens you would like to use.
