Sorrel is a perennial herb plant that grows in cold weather. The leaves are the only edible part of the plant. There are three types of sorrel: garden, French, and blood.
Garden sorrel (also known as common sorrel) is known for its zingy lemon flavor, and is great for making sorrel soup.
The leaves of French sorrel have a distinct arrow-shape, and strains have been selected for low oxalic acid content.
The leaves of Blood sorrel (red sorrel) are only edible when they’re young.
Before planting your sorrel, be sure to prepare a well-drained garden bed with well-tilled soil. Also before planting, make sure you’ve chosen a location with partial shade. After the last frost, sow your sorrel seeds 6 inches apart, and thin your sorrel when the plants reach a height of 2 inches.
When the sorrel reaches 4-6 inches tall, you can begin to harvest the sorrel leaves. Harvesting sorrel is much like harvesting lettuce. You can pick on an as-need basis. Harvest from the outer leaves so the sorrel plant will still produce foliage.
