Make Club Salad

Make club salad with all of the different varieties of lettuce you are growing. In the spring when you are planting lettuce, plant several varieties each week for several weeks so you have fresh salad each week. Lettuce grows quickly but will not keep for long once harvested. You want to pick it while the leaves are small and tender for the best flavor.

Tomato plants will produce a ton of tomatoes. Feel free to mix and match different varieties of ripe and juicy tomatoes in your salads all summer long. Enjoy the unique flavors of each plant.

When you make Club Salad, or any salad, use a mixture of lettuces and salad greens, along with ripe, juicy tomatoes for a tasty and filling lunch. Protein comes from the chicken or turkey. Taste comes from the crisp bacon and the Thousand Island dressing. You can serve it with buttered toast or with buttered pasta. The recipe below serves four adults.

You will need:

  • 10 cups of salad greens, torn into bite-sized pieces (mix and match your lettuce and salad greens for a variety of flavors)
  • 4 medium tomatoes, sliced
  • 2 cups cooked turkey OR chicken that have been cut into bite-sized pieces
  • 3/4 cup Thousand Island dressing
  • 4 slices of crisply cooked bacon, crumbled (I bake my bacon for better flavor--use pork or turkey bacon)
  • 4 slices of buttered toast (1 for each person OR 1/2 cup of bite-sized cooked pasta to be mixed in with the salad)

Divide the 10 cups of lettuce among four dinner plates. Place equal amounts of tomato slices on the beds of lettuce. Top with equal amounts of turkey or chicken. If you are going to use pasta instead of toast, place the pasta on top of the meat.

Now spoon equal amounts of the Thousand Island dressing on top of each plate. Sprinkle each salad with the crumbled bacon. If you did not add pasta to the salad, serve with a slice of buttered toast. There are about 450 calories per serving of this delicious salad.

If you prefer a different dressing, like Ranch (my personal favorite) remember that it is not called Club Salad without Thousand Island. It will still taste delicious but official Club Salad has Thousand Island dressing.
