A great way to use your garden pumpkins is to make pumpkin cookies. Soft and moist, they will be a hit with your whole family. They are perfect any time of year, but are especially appreciated from September through January during the holidays and cold weather.
You will need:
4 cups all purpose flour
2 cups quick oats, uncooked
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
1 and 1/2 cups butter,softened
2 cups brown sugar, firmly packed
1 cup granulated sugar
1 teaspoon vanilla extract
2 cups pumpkin
1 cup semi sweet chocolate chips
1 cup chopped pecans
Preheat the oven to 350 degrees Fahrenheit. In a large bowl, combine the flour, oats, baking soda, cinnamon, and salt. Set aside.
In another large bowl, cream the softened butter. Using a mixer works best, but this can be done by hand. Gradually add the granulated and brown sugars, one half cup at a time, until all of the sugar is well blended and the mixture is light and fluffy. Add the egg and vanilla and mix well.
Now alternate adding some of the flour mixture and then some of the pumpkin, one half cup at a time. Mix well after each addition until all of the pumpkin and all of the flour mixture have been added. Stir in the pecans and chocolate chips. Pour 1/4 cup of batter for each cookie on a greased cookie sheet to make 32 large cookies, or for smaller cookies, place one tablespoon of batter for each cookie on a greased cookie sheet.
For large cookies, bake at 350 degrees for 20 to 25 minutes, until the cookies are firm and lightly browned. To make the cookies smaller, bake 10 to 12 minutes, until the cookies are firm and lightly browned.
1. Leave out the chocolate chips and/or the nuts and bake the cookies plain. They are still delicious.
2. Add 1 cup raisins instead of the chocolate chips.
3. Add 1 cup white chocolate chips.
4. Add 1 cup walnuts instead of pecans.
5. Add 1 cup sunflower seeds instead of nuts.
