If you have a lot of yellow squash, make delicious Summer Squash Casserole. Each year, our garden produces tons of yellow squash, also known as summer squash. This recipe makes the perfect side dish for grilled chicken breasts. Complete the meal with a green salad and sweet tea and you have a wonderful summer meal. This dish is easy to make. My mother-in-law, Anna Schulze, gave me this recipe many years ago. You won't need to add salt because the soup is usually salty enough, although you may want to add pepper if you love black pepper like I do.
You will need:
Wash and cut off the ends of your squash. Chop it into pieces without peeling. Cook in large sauce pan on top of stove. Drain.
Spray a large square baking pan, 9"x9" with nonstick cooking spray. Preheat your oven to 350 degrees Fahrenheit. Open the box of Stove Top Stuffing Mix and mix together the bread crumbs and seasoning mix. Spread on the bottom of the square baking pan. Mix the cooked squash with the sour cream, butter, onion, and the can of soup in a large bowl. Stir well. Pour this over the bread crumbs. Top it with the grated cheese. Sprinkle with paprika. Bake at 350 degrees for about 25 minutes, until the food is bubbly and the cheese is golden brown.
The best squash is the squash you grow yourself. Squash is usually easy to grow and a plant can put out dozens of fruits as long as there are plenty of bees around.
If the bees are missing you can try to hand pollinate. I have never done this but I hear it works quite well. Sometimes you will see that the little squashes start to grow, then when they get about an inch long, they stop growing and die. This is usually caused by not enough pollen.
