Bell pepper and the Matadores are great for eating and stuffing. The rest of the peppers are good for drying and using as a seasoning. The hotter ones can be used as an insect repellent or pepper spray.
For good hybrid bell peppers, David recommends the Intruder and the Red Knight. You can try growing the Bianca which starts off as white but if left on the vine matures to red. Many people are used to green and red peppers. A white one may make scavengers think there is something wrong with it.
Pepper Bell Bianca 500 Hybrid Seeds

Ivory-colored bells. Medium-large, 4-lobed, and blocky. Fruits have a mild flavor and ripen to scarlet red. Sturdy plants yield well; good leaf cover protects the fruit from sun scald. High resistance to tobacco mosaic virus. Harvest in about 65 days for white color.

Suitable for using green or red at the fresh stage or dried for making hot pepper flakes or mini ristras. This type of pepper is commonly grown in Southeast Asia and China. Harvest in 80 to 100 days.
Pepper Cayenne Kilian 500 Hybrid Seeds
