Bell pepper and the Matadores are great for eating and stuffing. The rest of the peppers are good for drying and using as a seasoning. The hotter ones can be used as an insect repellent.
For good hybrid bell peppers, David recommends the Intruder and the Red Knight. You can try growing the Bianca which starts off as white but if left on the vine matures to red. Many people are used to green and red peppers. A white one may make scavengers think there is something wrong with it.
Ivory-colored bells. Medium-large, 4-lobed, and blocky. Fruits have a mild flavor and ripen to scarlet red. Sturdy plants yield well; good leaf cover protects the fruit from sun scald. High resistance to tobacco mosaic virus.
Harvest in about 65 days for white color.
Bianca Bell Pepper 1000 Hybrid Seeds
Intruder fruits are large, blocky bells with thick walls. Plants are medium large with a good canopy to minimize sunscald. Well adapted to the Northeast but also grown in the Midwest. High resistance to bacterial leaf spot races 1 to 3, tomato etch virus, and tobacco mosaic virus; and intermediate resistance to phytophthera root rot. You should be able to get about 200 peppers from 25 seeds.
Harvest in about 62 days for green to 72 days for red.
Intruder Bell Pepper 1000 Hybrid Seeds
King Arthur type with better disease resistance and a more compact open plant. Get a jump on the season with a large, early, green-to-red pepper. Big, blocky, thick-walled bell pepper turns red early. Fruity and sweet. Widely adapted. High resistance to bacterial leaf spot races 1 to 3 and potato virus Y.
Harvest in 57 days for green and 77 days for red.
Red Knight Bell Pepper 1000 Hybrid Seeds
The cayenne peppers David likes are the Bangkok and the Kilian.
Small, very hot Thai chile. Bangkok's small, fiery-hot fruits average three inches and set heavily on big, upright plants. Suitable for using green or red at the fresh stage or dried for making hot pepper flakes or mini ristras. This type of pepper is commonly grown in Southeast Asia and China.
Harvest in 80 to 100 days.
Bangkok Cayenne Pepper 1000 Hybrid Seeds
Early, bright-orange cayenne. The small Thai chile fruits avg. 2 1/2-3" long and are hot. Best for fresh use, as dried fruits have a "muddy" color. Small plant.

Kilian Cayenne Pepper 1000 Hybrid Seeds
For Hot Peppers you may want to try the Habanero Rey Pakal and the Mattadores which is a stuffing pepper.
The Rey Pakal is a vigorous healthy plant that provides prolonged, high yielding harvests. Fruit are medium-dark red in color, uniform, and extremely hot.

Rey Pakal Hot Pepper 1000 Hybrid Seeds
Tall and vigorous plant, well suited for cultivation both indoors and outdoors. True "Italian Roasting" pepper. Large size fruit with deep green and red colors when ripe. Resistant to TMV race 1,2.

Mattadores Hot Pepper 1000 Hybrid Seeds
For jalapeno peppers grow the El Jefe and the Jalafuego.
El Jefe Jalapeno is the best combination of earliness and yield in a jalapeno. Fruits average 3 and 1/2 to 4 inches, a bit longer and thinner with less checking (small cracks in skin) than Conchos. Large plants have a higher yield potential than Conchos. High resistance to bacterial leaf spot races 1 to 3; and intermediate resistance to tobacco etch virus.
Harvest in about 60 days for green and 90 days for red.
El Jefe Jalapeno 1000 Hybrid Seeds
Extend your jalapeno harvest with Jalafuego Jalapenos. Vigorous plants consistently produce very high yields of 3 and 1/2 to 4 inch fruits that are resistant to cracking. Very hot pepper. Resistant to BLS 1 to 3.
