This page talks about how to buy Doomsday Kale Seeds from David's Garden Seeds®.
Kale is an exceptionally cold-tolerant crop with a sweet flavor enhanced by frost and cold weather. They do not have a lot of calories and do not last long once harvested but can handle temps down to 20 degrees. They can be dried to make kale chips.
On our Doomsday Kale section, you will find instructions on how many kale plants are needed to feed one person for a year.
One cup of kale has about 30 calories in it. Based on a daily diet of 1200 calories, it would take 40 cups of kale per day. One kale plant will fill about 4 cups. So you would need about ten plants per day or 3650 per year just to eat kale. Lets say 4000 a year so we can produce seed and have some to trade.
A single kale plant needs about 18 square inches. In a 4 x 8 raised bed, you can grow about 18 plants. This would be about 225 raised beds which would probably be impossible to do. So you would need about 1/8 acre in order to grow kale.
Grow at intervals so that it does not all mature at once. Kale will only last about 24 hours without refrigeration. Only plant what you can eat and process for storage in a 24 hour period.
Of course during
the cooler months, you will be able to make some sort of "cold" storage
container that will help your food last longer. Where it freezes you
may even be able to freeze enough ice to supply an "ice box" during the
entire warm/hot season.
Kale can be dried or canned. I
personally do not like it either way. The best way to eat kale is
fresh. One advantage to kale is it will last almost all season when
growing the right varieties. Here in San Antonio, it can be grown year
round. At one of the health food stores, we bought some kale chips. I
did not care for them.
Fresh kale is best especially when it has been through a frost. The frost brings out the flavor.
Kale Toscano 400 Non-GMO, Heirloom Seeds
Our recommendation for kale is the Toscano kale. It is a good all around and all weather, except for extreme heat. Unique leaf type, extra-dark green, non-curled but heavily blistered (savoyed). Tolerant to hot and cold weather. Dry to make kale chips. Harvest in about 30 days for baby, 65 days for mature.
Kale Blue Curled Scotch 400 Non-GMO, Heirloom Seeds
Blue Curled Scotch is a variety that is delicious, nutritious, and attractive. It is an extremely strong producer, especially in cooler climates. Use Blue Curled Scotch Kale in salads or stir-fry. Can be dried to make kale chips. Harvest in about 55 days.
