Soybeans originates in Asia and their fresh shell and dry forms are highly regarded for their yield, protein, and oil content, as well as a multitude of nutritional uses. Typically used at the green shell stage as "edamame," other uses include green and dry cooking, flour, soy milk, tofu, soy sauce, and miso. We have selected these early maturing, vegetable types. Dry soybeans average 40% protein and 18% oil.
BeSweet Soy Bean 50 Open Pollinated Seeds
One of the earliest. Ideal fresh (prepare like peas) or dry. Fresh bean
is green and mature bean is yellow. High yielding - best when planted in
late spring. Bushy, 30 inch plants produce medium-sized pods containing 2 to 3
flavorful, large beans. High protein content. Ideal for Northern
climates. Harvest in about 80 to 90 days.
Chiba Green Soybean 100 Open Pollinated, Organic Seeds
High-quality organic soybean. Chiba Green plants are upright, compact, and produce good yields in a concentrated set. Crisp and tasty, the large, plump pods average 2 and 1/2 inches with 3 beans each. 2 and 1/2 feet tall plants. Widely adapted. White pubescence. Organically grown. Harvest in about 85 days.
Envy Soybean 100 Open Pollinated Seeds
The earliest green soybean, Envy Soybean is well established as the short-season favorite soybean. The upright, 2 feet tall plants bear an early crop of bright green beans for "edamame", fresh shelling, or drying. Tan pubescence. Harvest in about 75 days.
