This is our Doomsday Eggplant page. It gives instructions on how many eggplant plants are needed to feed one person for a year.
One cup of eggplant is about 20 calories. On a 1200 calorie diet this would be about 60 eggplants a day. I hope you are hungry.
You can get about 15 eggplants from one plant. You would need about 4 plants per day. This is 1460 plants. So lets say 1600 plants for eating, seed production and trading.
You would need about 2000 square feet to grow this many. Eggplant can be dried, canned or pickled. You will want to space your growing out so that all the eggplants do not mature at one time.
Eggplant will last about three days unrefrigerated.
Eggplant will not grow when it gets cold. They like it nice and warm.
