This page talks about doomsday lettuce.  It gives information on how many plants it would take to provide a daily intake of 1200 calories for one person for one year.

There are about five calories in a cup of lettuce.  On a 1200 daily diet of lettuce it would take 240 cups of lettuce for survival.  I would say that no one wants to eat 240 cups of lettuce each day.

It would be best to grow lettuce as part of a salad or for variety.  In a 4 x 8 foot raised bed you can grow about 30 heads of lettuce.

Here in San Antonio, we can grow lettuce year round.  There are varieties that will survive the cold and some that will survive the heat.

You can sun dry lettuce.  You cannot can it, but you can ferment it with salt.  Not sure I would like it in any of these cases.  And you would have to have a lot of salt available.

Lettuce will last about 12 to 24 hours un-refrigerated.  About 7 to 10 days refrigerated.  You would need to come up with some sort of cold storage box.  It might not last year round but maybe long enough to enjoy some of the vegetables that do not last long un-refrigerated. 

It is something easy to grow for the rabbits, chickens and goats, though.
